Lee's V-Day 2

...another day, another calorie deficit, and no Vegan violations!

BLUF (1,754 calories):

Breakfast (393 calories):
Whole Wheat Bagel
Creamy Peanut Butter, 1 tablespoon
Coffee with sugar

Lunch (460 calories):
Subway Veggie Delight, 12" Wheat with lettuce, tomatoes, onions, pickles, and spicy mustard
About 20 oz of water

Dinner (820 calories)
Super Chunky Mushroom Spaghetti Sauce, 2 cups
Barilla Spaghetti, 5 oz
About 32 ox of water

Snacks (81 calories)
Peanut Butter, 1 tablespoon
Carrots, 2 medium
About 20 oz of water
Coke Zero, 20 oz

Fitbit reports that I had only 6,850 steps and therefore earned just 22 credit calories beyond my normal caloric expenditures.

I attempted to rebalance the "inverted pyramid" of calorie consumption yesterday by front-loading more calories during the day, but only succeeded in moderating the "end of day" feast effect that is borne from a learned lifetime expectation starting at our family farm that you can "earn" a great meal at the end of a long, hard day of work...another reason is that it seems that my day only begins to slowdown at the end of the day.

One interesting compliance element to our diet was tied to labeling and setting bounds of what is Vegan permissible...check out the following label from a box of Barilla Spaghetti:
Clearly, the ingredients are aligned with Vegan principles; however, given the potential that this spaghetti might mingle microscopically with egg elements...what do we do? The ruling from the Blog Chair, Mark, was to focus on the content of the food...happy to comply!

  1. Interesting point about the potential contact with eggs. Like we talked about, it could be because of allergies. I can't imagine myself being that strict ever, but there are people who hold to those kinds of dietary restrictions - conservative Jews and Muslims for example. So I guess it's not that crazy. Just different.
