Lee V-Days 16-21: Whew!

Hello! Wow...what a super busy time of our academic year and my life. We are in the final weeks of the Army-Baylor MHA-MBA didactic year (54 weeks, 57 credit hours for MHA students; 78 credit hours for the MHA-MBA students). I teach the capstone course (Strategic Management) and we have spent the past week conducting one-hour board sessions with students in the morning and afternoon...students' performance was great (and gratifying for a professor), but practically most of each day is dedicated to the presentations and my normal "admin responsibilities" tend to expand to the beginning and end of the day. Hotel living has narrowed my eating choices (bagels, fruit, microwave rice, water, nuts, etc.) and plenty of "Veggie Delight" sub sandwiches from Subway. I continue to be compliant with the Vegan way, but looking forward to returning to a new normalcy next week...one clear lesson learned from this experience is that I can\should moderate my consumption of high protein and\or high fat foods.  My caloric intake remains in the 1,700-2,100 calorie range or about a 700 - 1,000 calorie deficit daily. Fitbit reports of steps ranged from 7,000 - 11,000 steps earning 50 - 450 calories during the period.

One great experience on Days 20-21 was the opportunity to take my daughter, Ashley (see picture below on campus this weekend), to the summer Duke TIP at Austin College. I am so proud of her and look forward to hearing of her own new experiences over the next few weeks.


Our trip to Ashley's program did provide some vegan knowledge and perhaps some sort of "food rivalry" between Sicilians and Italians in the game of "Italian Sauce"...everyone in the family was set on pasta for dinner, but we were trying to decide whether Olive Garden or Macaroni Grill. More than one vegan site indicated the Olive Garden sauce followed the "Sicilian Way" of adding butter to the sauce, while Macaroni Grill was aligned with the "mainland" path of simpler tomato-based sauce. ...so, we chose Macaroni Grill and the "Create Your Own Pasta" to have this tasty spaghetti with spinach, mushrooms, garlic, and Pomodoro sauce
